Rawlith demonstrates just how different Assyrtiko can become in the hands of a low-intervention winemaker.

Produced by The Knack Project in Attica, the wine spends 16 months ageing on its lees in concrete egg and French oak, with gentle skin contact adding texture and complexity. The result is a rich, savoury white that sits somewhere between a classic white wine and an orange wine, offering remarkable depth while retaining Assyrtiko's signature freshness.

Papadopoulos Orange Assyrtiko

This skin-contact Assyrtiko offers another perspective on what the grape can achieve.

Produced in Rapsani using minimal intervention techniques, it combines mountain freshness with gentle tannins, citrus peel, dried herbs and textured minerality.

Deus Ex Machina

One of the boldest expressions in our portfolio, Deus Ex Machina pushes Assyrtiko into full orange wine territory.

Produced by The Knack Project, the wine spends 24 days on its skins before ageing for 16 months on its lees in French oak. Just 646 bottles were produced.

The result is intensely textured and deeply complex, with notes of citrus peel, dried apricot, herbs, spice and tea-like tannins. It's an unforgettable wine for anyone interested in natural wine or skin-contact wines.
